I interviewed for a Software Engineer role at GitLab with a fairly standard, well-guided process (roughly a month), mixing merge-request work with behavioral conversations.

Online questionnaire / recruiter contact — I first completed a written set of questions or an initial application step, then had a 30-minute screening call focused on fit, expectations, and fit with the values/culture.
Technical interview (merge request + discussion) — I reviewed a merge request in a repository ahead of time or was given one to work from, then discussed proposed changes and troubleshooting (including why tests might fail / how to address issues).
Manager / team behavioral interviews — I went through one or more behavioral interviews with engineering
